This is another recipe that is halfway between cake and cookies. Leslie and J.S. liked them so much that they deliberately let bananas get overripe so I would have to use them up in this recipe.
1 cup shortening
1 cup sugar
2 eggs, well beaten
1 tsp. vanilla
1 3/4 cups flour, sifted
2 tsp. baking powder
1 tsp. salt
1 cup (3 large ones) mashed, ripe bananas
1. Cream shortening and sugar until light and fluffy; beat in eggs and vanilla.
2. Sift together flour, baking powder and salt; add alternately with mashed bananas to creamed mixture, beating well after each addition.
3. Turn into greased 9x13 pan
4. Bake at 350° 25-30 min.
5. Cool; frost with buttercream made with 10x sugar and orange juice. Cut into bars.
