2 lb. fresh ripe tomatoes, peeled and
chopped
l lemon, zest removed and juiced
Fresh basil, 1/4 - 1/2 cup
Fresh parsley, 1/4 - 1/2 cup
1/4 cup olive oil
l - 2 Tbsp. red wine vinegar (optional)
Salt, freshly ground pepper
l lb. curly pasta
Mix tomatoes with lemon juice, rind, basil, parsley. Let set l or 2 hrs. Add oil, salt and pepper. Taste and add wine vinegar if needed for tartness. Toss with freshly cooked pasta and serve at room temperature. Garnish with basil leaves or chopped parsley.
