1 egg, beaten
2 cups cooked rice
1/2 cup cooked leftover ribs (or chicken,
shrimp or crab)
1/2 cup fresh or frozen green peas.
1 - 2 Tbsp. soy sauce
Heat 2 Tbsp. oil in large skillet or wok. Cook beaten egg as you would an omelet. Remove from wok. Add remaining ingredients except soy sauce. Cook 4 - 5 min. stirring gently. Add soy sauce and cook 2 min. more. Add cooked egg, which you have cut in strips, and cooked peas.* Serves 4. *I really prefer the peas uncooked. Just run water over frozen peas until thawed and heat through.
