3 cups fresh tomatoes, peeled and coarsely chopped
1 1/2 cups cucumbers, peeled and chopped
1 green pepper, cored, seeded and coarsely chopped
1 clove garlic, crushed
1/2 cup water
5 Tbsp. olive oil
1/4 cup red wine vinegar
Salt to taste
2 slices fresh bread, cubed
Combine all ingredients in the container of a blender or food processor and blend at high speed until ingredients are smoothe. Taste, and adjust salt and vinegar to taste. Chill before serving.
