2 cups white sugar
1 cup brown sugar
4 eggs
2 cups pumpkin (16 oz. can)
1 cup oil
2 tsp. soda in 2/3 cup water
2 1/2 cups flour
1 1/2 tsp. salt
1 tsp. ea. nutmeg, cinnamon, cloves
1. Beat sugar and eggs together
2. Add mixture of pumpkin, oil and soda water to #1.
3. Sift dry ingredients together and add to above mixture, mixing well.
4. Add raisins or chopped dates if desired (Dredge in flour first or they will all settle to the bottom)
5. Bake in 4 or 5 mini-loaf pans filled 2/3 full for 50 min. at 350°. Test with toothpick. Can also be baked in greased cans for 40 min. If you want to use regular size loaf pans, start testing at 1 hour.
