One of Leslie's favorites is Pickled Okra. This recipe is from the LBJ Ranch.
Start with 2 pkg. (10 oz.) frozen okra or the equivalent of fresh. If using frozen okra, thaw and drain. Sterilize 2 pint canning jars and lids and keep in hot water while preparing recipe. In a small saucepan, combine 1 1/4 cups white vinegar ,3 Tbsp. salt and 1/2 cup water. Bring to boiling. Place 1/2 tsp. dill seed in bottom of each jar. Pack okra into jars being careful not to break pods. On top of okra, put 1/2 tsp. dill seed, 1 dried red pepper, 1 canned chile pepper and 2 peeled cloves garlic. Pour the hot vinegar mixture over the top of each jar. Cap according to manufacturer's directions. Let stand at room temperature until completely cooled. Refrigerate at least 2 weeks before serving to let flavors develop. Serve chilled with a real Texas meal such as Barbecued Brisket and Beans.
