1/2 cup each corn oil, water and vinegar*
2 cloves garlic, minced
1 tsp. dried oregano
1 tsp. salt
1/4 tsp. freshly ground black pepper
Mixed raw vegetables such as broccoli flowers or stems, peeled and sliced; zucchini, bell pepper, carrots, celery, onions, mushrooms. Use whatever you have on hand, cutting into bite sized pieces.
In a large skillet bring the first 7 ingredients to a boil. Add the vegetables and bring to a boil. Reduce heat. Cover and simmer 5 min. Cool and refrigerate. I serve these as a sandwich in Pita bread spread with a mixture of mayonnaise and Feta cheese. They also can be used as an antipasto or a salad.
*Use white, cider or red wine depending on your taste.
