1/4 cup olive oil
2 Tbsp. lemon juice
1 Tbsp. onion powder
2 Tsp. crumbled rosemary leaves
2 tsp. grated lemon zest
1 1/4 tsp. salt
1 tsp. sugar
1/4 tsp. black pepper
1 broiling-size chicken, cut in eighths
In small bowl, combine everything except the chicken. Preheat broiler to 375°. Place chicken, -skin down- on broiler rack. Brush with oil mixture. Cook, brushing frequently with oil mixture for 20 min. Turn and cook 20 - 25 min. more until done.
We happen to love the flavor of rosemary with chicken, but tarragon is good too. Experimant with your favorite herbs and seasonings. I usually double this recipe and have John cook it on the grill on a weekend. The leftovers are great'
