I must confess that a salad at our house is usually a tossed green salad, but that doesn't have to be monotonous. I use whatever greens look the freshest plus anything and everything else in my crisper. The basics are greens and tomatoes. Then let your imagination be your guide. From Mama Oeler, I learned the easy way to dress a salad. Sprinkle with a good garlic salt; add several grinds of fresh pepper; pour over a few Tbsp. of good salad oil and then sprinkle with a few tsp. of red wine vinegar and toss. I've made our salad too tart on occasion and so will you, but practice makes perfect. If you don't trust your eye, mix up one of the following:
