I'll never forget the first time I tasted Pecan Pie. It was in 1941 on our first trip from Pennsylvania to Florida. I thought I'd died and gone to heaven. Jan Willis makes one that duplicates that experience.
1 recipe pastry prepared as for Lemon Pie but left unbaked
3 eggs
1 cup Dark Karo syrup
1 cup pecan halves
1 tsp. vanilla
1 cup sugar
l/2 cup melted butter
1/4 tsp. salt
Beat eggs until light. Add sugar and beat again. Add butter, Karo, salt and vanilla. Mix well. Pour into unbaked pie shell and bake 45 min in preheated 350° oven. Custard should be set. Test with knife. It should come out clean.
