1 pkg. chocolate wafers, crushed
1 pint whipping cream
1 - 9 oz. pkg. butter mints
1 cup finely chopped nuts(pecans)
Soak mints in heavy cream in mixing bowl overnight (in refrigerator). The next day, whip the cream until stiff. Fold in nuts. Add food color if desired. Spread crushed wafers over bottom of a greased 8" sq. pan. Pour in whipped cream. Freeze for several hours. You can double this recipe and use a 9x9 pan. The double recipe serves 12 - 16 persons.
