2 eggs, lightly beaten
4 Tbsp. honey
2 cups sugar
1 tsp. cinnamon
1/4 tsp. ginger
1/16 tsp. ea. pepper, cloves, nutmeg
4 Tbsp. cocoa
1/2 lemon, rind grated plus juice
3 1/4 cups sifted all-purpose flour
1/2 tsp. soda
1/4 tsp. cardamom
10 Tbsp. ground hazelnuts (may substitute)
Mix all ingredients thoroughly. Mixture will be very crumbly. Pat onto a cookie sheet with a spoon. Bake at 300° 15 - 20 min. Remove from oven and while still warm, cut into diamond shapes. Glaze with a mixture of 2 cups confectioners sugar and the juice of 1 lemon.
