1 lb. lean beef (flank or round steak),
partially frozen
3 Tbsp. soy sauce
5 Tbsp. water
1/8 tsp. white pepper
2 1/2 tsp. cornstarch
1/4 cup chicken broth
1 bunch broccoli
1/3 cup oil
1/2 tsp. salt.
Cut meat into chunks 2"x3/4". Slice across grain into 1/8" slices. Mix 2 1/2 Tbsp. soy sauce, 2 Tbsp. water, pepper, and 2 tsp. corn starch. Marinate beef slices 30 min. Combine chicken broth with 1/2 tsp ea. corn starch and soy sauce., or you may substitute 2 Tbsp. oyster sauce for these ingreds. Cut flowers from broccoli; separate into bite sized flowerets. Peel stems and cut into 1/4" slices. Heat 2 Tbsp. oil in wok. Add broccoli; sprinkle with salt and stir-fry to the degree of doneness you like. (If you like your vegetable well-done, sprinkle some water in wok and cover a few minutes. Remove broccoli from wok. Wipe with paper towel. Add remaining oil and turn heat to high. When oil is hot, stir-fry the beef until cooked through. Add the chicken broth mixture or the oyster sauce and stir until thickened. Add the broccoli to the wok and combine with meat. When heated thorugh, serve over boiled rice.
This is really another of those basic recipes. Try it with snow peas, yellow onion cubes or green peppers.
