l lb. sole fillets
2 Tbsp. onion, finely chopped
3 Tbsp. butter
3 Tbsp. flour
1 cup milk
1/2 cup dry white wine
1/2 cup cream
1/2 cup grated Parmesan
1 Tsp. lemon juice
Lay fillets in a shallow greased pan which is broiler proof. Saute' onion in butter. Blend in flour, milk, and wine. Cook, stirring until sauce thickens. Blend in cream and cheese. Add salt and pepper to taste and stir in the lemon juice. Pour this sauce over the fish. Sprinkle with more Parmesan. Bake in a hot oven 425° about 15 min. or until fish flakes easily. Run under the broiler just enough to add a brown glaze to the sauce.
Do you notice that I do not say how many these recipes serve? I buy 2/3 to 3/4 lb. of boneless fish for just the two of us. Our family has notorious appetites so I don't really know what is average. Besides, with today's microwaves it is so easy to warm up leftovers that I always cook plenty.
