2 lb. potatoes, grated in food processor
1 small onion, grated
2 Tbsp. flour
4 strips bacon, cooked crisp and crumbled
2 beaten eggs
1 tsp. salt
Pinch of pepper and nutmeg
2 Tbsp. chopped parsley
Butter or oil (Half of each is good)
Drain off any water that collects from grating potatoes. Mix potatoes and onions with the remaining ingredients - except butter. Heat butter -about 1/4"-deep- in a large skillet. do not let it brown. Drop in 1/3 cup batter for each pancake, flatten and brown till golden and crispy on ea. side. Drain on paper towels and serve hot with apple sauce. Makes 12 pancakes.
