For those of you unfamiliar with the gourmet qualities of the humble grits I dug out this recipe which is one of my favorites.
Cook 1 cup quick grits, according to package directions.
Add 1/4 lb. butter or margarine and 6 oz good cheddar to hot grits, then add 1/2 cup milk, blended into 2 beaten eggs.
If the grits are very hot, stir 1/2 cup full of hot mixture into egg/milk mixture and then stir all into grits.
Blend all ingredients well. Turn into an oven-proof greased casserole and bake at 350° for 45 min. Knife should come out clean.
