Another easy one prepared in the baking pan.
2 cups sifted flour
2 tsp. baking soda
1/2 tsp. salt*
2/3 cups firmly packed brown sugar
1 cup chopped pecans*
1 tsp. cinnamon*
2 eggs
1 1/3 cups sugar
1 can (1 lb.,14 oz.) fruit cocktail
2 tsp. vanilla
Sift together the flour, soda and salt. Mix brown sugar, nuts and cinnamon. Break eggs into 9x13 baking dish. Beat with a whisk until yolks and whites are combined. Add sugar, stir until blended. Stir in fruit cocktail including syrup. Add vanilla. Sift in flour mixture, mixing until evenly distributed. Sprinkle streusel* over top and bake at 350° 30-35 min. Serve warm with whipped cream.
