1/2 lb. black beans
1 cup olive oil
1 large onion, chopped
1 clove garlic
1 Tbsp. salt
1 oz. salt pork or bacon
1/4 lb. ham bone
1/2 cup vinegar
3 green peppers, chopped
3 bay leaves
1 1/2 qts. water
Soak beans thoroughly. Fry onion, green pepper and garlic in 1/2 cup oil. Combine all ingredients except vinegar and cook over low heat until beans are tender and the liquid is thick. Add vinegar just before serving. I usually serve the vinegar separately and let each person add it to his taste.
