Tortellini Salad with Asiago, Peas and Prosciutto

Ingredients:

1 pound cheese tortellini

2 cups frozen peas, thawed

⅓ cup extra-virgin olive oil (or more, if needed)

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

2 teaspoons minced garlic

1 tablespoon honey, or to taste

Salt and pepper

4 ounces diced prosciutto

1 small red onion, thinly sliced

½ cup grated Asiago cheese

Method:

Prepare tortellini per package directions, place in colander, run cold water over all and drain well.

Microwave the peas until thawed.

In a small mixing bowl, whisk the oil, and vinegar well.

Add garlic and oregano; stir in honey, salt and pepper.

In a large bowl, combine pasta, peas, prosciutto, onion and Asiago cheese.

Toss with vinaigrette. Season with salt and pepper, if needed.

Transfer to serving bowl.

Serve
