APPLE SPICE CAKE w/BROWN SUGAR CRUMBLE TOPPING

Cake Ingredients:

Non-stick baking spray

2½ cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking soda

½ teaspoon salt

2 teaspoons cinnamon

1 teaspoon cardamom

½ teaspoon ground clove

2 apples, peeled, cored and chopped small

2 eggs, lightly beaten

2 teaspoons vanilla

½ cup vegetable oil

1 stick butter, melted

Method:

Preheat oven to 350°.

Spray loaf pan with non-stick cooking spray.

In a large bowl, whisk together flour with next 6 ingredients, through ground cloves.

Add apples and remaining ingredients, mix well.

Pour batter into loaf pan.

Top with crumble topping (recipe below).

Bake for 45-60 minutes for large loaf pan, depending upon your oven, until a toothpick inserted in the center comes out clean.

Let cool in pan for 10 minutes.

Transfer to a wire rack to finish cooling.

Brown Sugar Crumble Topping

Ingredients:

½ cup flour

2 tablespoons granulated sugar

¼ cup dark brown sugar

2 teaspoons cinnamon

¼ teaspoon salt

¼ cup butter

Method:

Whisk together all ingredients, except butter, in a small bowl.

Cut in butter with a fork until small crumb stage.

Set aside until ready to sprinkle evenly over the top of the cake before baking.

Makes one 9 x 5-inch loaf pan or 3 mini loaf pans.
