CHEESY SUMMER SQUASH STIR-FRY

Ingredients:

2 tablespoons vegetable oil, divided

2 pounds summer squash and/or zucchini

1 large Vidalia onion, cut into large pieces

3 cloves garlic, minced

4 ounces Velveeta, cubed

1 tablespoon Mrs Dash Extra Spicy

½ teaspoon dried basil

1 large tomato, peeled and cut into chunks

8 ounces mushrooms, sliced

Salt and pepper, to taste

Method:

Heat 1 tablespoon oil in a large skillet over high heat.

Add squash, onion and garlic, and stir-fry until browned slightly.

Season with Mrs Dash and basil.

When vegetables are slightly browned, remove from heat, add the cubes of cheese and cover the skillet.

Pour remaining oil in a separate fry pan, cook the tomato and mushrooms over medium-high heat for about 5 minutes, stirring occasionally.

Allow the juice from the tomatoes and mushrooms to evaporate some.

After 5 minutes, add the tomatoes and mushrooms to the rest of the vegetables and stir.

Salt and pepper to taste.

Serves 4
