This recipe courtesy of Pam's Midwest Kitchen Korner
Ingredients:
2 cups sugar: 1 white, 1 brown
1 cup shortening
2 eggs
3½ cups flour
1 cup crushed pineapple, drained, reserve juice
1 cup chopped pecans or walnuts
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 teaspoons vanilla
Method:
Preheat oven to 375°.
Mix in order and drop by teaspoon on greased baking sheet.
Use reserved pineapple juice and powdered sugar for icing, optional.
Pineapple Glaze:
4 tablespoons butter
1 pound powdered sugar
1 teaspoon vanilla
Reserved pineapple juice
Method:
Beat butter until smooth.
Slowly add sugar and juice until of glaze consistency.
Spoon over warm cookies.
Makes 7 dozen cookies
