Ingredients:
1 pound catfish fillets
¼ cup light creamy Italian or ranch dressing
¼ cup yellow cornmeal
¼ cup dry bread crumbs
1 teaspoon chili powder
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon salt
¼ to ½ teaspoon seasoned pepper
Cooking spray
Method:
Heat oven to 425°.
If fillets are large, cut into 4 pieces.
Lightly brush dressing on fish.
Mix remaining ingredients and dredge fish.
Place fish on baking pan that is lightly coated with cooking spray.
Bake about 18 to 20 minutes until fish flakes easily with a fork.
