Ingredients:
1⅓ cup butter, softened
1 cup sugar
1 large egg
1 tablespoon almond extract
2½ cups flour
½ teaspoon salt
2 cups ground walnuts
1 teaspoon lemon peel
1 cup raspberry seedless preserves, or blueberry or, your choice
Method:
Preheat oven to 350°.
In a large bowl, using an electric mixer, cream butter and sugar, until light and fluffy.
Beat in egg, and lemon peel.
Stir in flour and ground nuts.
Spread 2 cups of dough onto a parchment-lined 13 x 9-inches pan.
Spread with preserves.
Crumble remaining dough on top.
Bake until lightly browned, about 35 to 40 minutes.
Cool completely.
Cut into bars, sprinkle with powdered sugar.
Makes 24 large bars (I cut them smaller to make 30 bars).
