SAUTÉED CHERRY TOMATOES over GRILLED CHICKEN BREASTS

Ingredients:

2 tablespoons olive oil

2 pints cherry tomatoes, halved

6 garlic cloves, minced

2 teaspoons fresh thyme leaves, chopped fine

1 teaspoon kosher salt

2 teaspoons seasoned pepper

4 grilled chicken breasts

Method:

Add oil to a large skillet over medium heat.

Add garlic to the oil and cook for 30 seconds.

Add tomatoes, garlic, thyme and salt and pepper.

Reduce heat to low and cook for 6-7 minutes, tossing occasionally, until tomatoes begin to loose their firm shape and skins start to wrinkle, about 2-4 minutes.

Serve over grilled chicken breasts.
