SPICY ROASTED PORK TENDERLOIN

Recipe from Pam's Midwest Kitchen Korner

Ingredients:

  • 1 pound pork tenderloin
  • 1 tablespoon oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 1-2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon seasoned pepper
  • 1 teaspoon chili powder
  • 1 tablespoon each lime and lemon

Method:

  1. Preheat oven to 400°.
  2. Coat a baking dish with cooking spray.
  3. Place meat on baking dish and rub with oil.
  4. Mix together remaining ingredients, spread over pork, let sit for 15 minutes.
  5. Bake 20-30 minutes until browned and crispy and inside is cooked through until desired doneness.
  6. Let rest for 5 minutes, slice into 1" pieces.
  7. Serve
