SPICY GARLIC-LIME SHRIMP with GRITS

Ingredients:

1 pound large shrimp, peeled and deveined

¼ cup butter

3 garlic cloves, minced

1 teaspoon granulated sugar

½ teaspoon salt

¼ to ½ teaspoon red pepper flakes

2 teaspoons chili powder

3 tablespoons fresh lime juice

Green onions, sliced and lime slices, for garnish

Stone-ground grits

Method:

Melt butter in a large skillet over medium heat.

Mix in garlic, sugar, salt, red pepper flakes, and chili powder, sauté for 30 seconds.

Add shrimp and sauté until shrimp turns pink about 4-5 minutes.

Stir in lime juice.

Serve over grits and garnish with lime slices and onion.

For grits:

4 cups water

1 cup stone-ground grits

Salt and butter, to taste

1 teaspoon garlic powder (optional)

Bring water to a rapid boil in a heavy saucepan.

Add butter, salt, garlic powder and grits and stir until water boils again.

Lower heat to a simmer, cover and continue cooking for 20 minutes stirring often and adding water if necessary.
