AIR FRIED CORNMEAL-CRUSTED LAKE PERCH

Ingredients:

4 perch fillets

1 egg

1 teaspoons Dijon mustard

½ cup cornmeal

2 teaspoons vegetable oil

¼ teaspoon red pepper flakes

½ teaspoon each, salt and seasoned pepper

Method:

Whisk together egg and mustard in a shallow dish; dip fish into mixture, covering well.

In a resealable plastic bag, combine cornmeal, oil and seasonings.

Place fish in bag and coat well.

Preheat air fryer to 390°.

Gently lay fish in the basket.

Cook for about 15 minutes, according to thickness of fish, until nice and crispy, flipping once half way through.

Serve with tartar sauce.
