Feedback I received via Tina Bueche suggested that some of you were left with questions about dietary fat and heart disease, as well as about which fats are healthiest to consume. I call heart disease “Diabetes of the Heart” as it is caused by insulin resistance, just as most other common diseases are. The same dietary principles apply, so no worries. For more information on insulin resistance and heart disease I recommend the book Eat Rich, Live Long (see details below). The healthiest fats are animal fats (duck fat, lard, butter/ghee, egg yolks, etc) and fruit fats (olive, avocado and palm fruit oils). Cold-pressed nut fats such as sesame oil and walnut oil are somewhere in between because they are not highly-processed but they do happen to be high in inflammatory omega-6 fatty acids. Coconut oil is low in omega-6 so that can be a good plant-based choice.

Eat Rich, Live Long by Jeffry Gerber, MD and Ivor Cummins. Excellent new book about the true cause of heart disease: insulin resistance. This book explains why high-fat diets are actually heart-healthy.
