Welsh Cakes

Ingredients:

2 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup cold butter

1/2 cup sugar

1/2 cup cranberries

1/4 teaspoon ground coriander

1/8 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1 egg, beaten

About 2 tablespoon milk

Oil for the pan

Directions:

1) Whisk flour, salt and baking powder in bowl. Cut in the cold butter with a pastry cutter or hands until the mixture resembles course crumbs. Add the sugar, cranberries and spice, stirring to mix.

2) Add the egg and enough milk to form a soft but not sticky dough.

3) On a lightly floured surface, roll out the dough to a thickness of 5mm. Cut into rounds with a 2 in round cookie cutter.

4) Heat the griddle or a heavy frying pan and grease with a little oil. Cook the cakes on the griddle or pan on low heat for about three minutes per side or until golden brown and cooked through. Leave to cool on a wire rack. Sprinkle with a little sugar while still hot, if desired.
