Portobello Mushroom Appetizer

Ingredients:

12 portobello mushrooms

chopped vegetables (I used roasted red peppers and zucchini)

1/2 onion chopped

grated cheese

oil

pasta sauce

salt and pepper

Directions:

1) In a pan, add 1 tablespoon oil and saute the onions. When the onions have softened and have become translucent, add the vegetables. Continue sauteing until for a couple of minutes.

2) On a baking tray, spread out the portobello mushrooms. On each mushroom, drizzle some olive oil. Spoon some pasta sauce over it. Add some sauteed vegetables and salt and pepper to taste. Top with cheese. For all the ingredients, add in whatever quantity you desire.

3) Bake at 350F for about 10 minutes.
