Apple Pancakes

Ingredients:

2 eggs

2 teaspoon sugar

1/2 cup milk

1 teaspoon vanilla

1/2 cup flour

pinch of cinnamon

1 large or 2 small apples, peeled and cored

butter for frying

Directions:

1) In a medium bowl, beat eggs with sugar. Add milk and vanilla and mix.

2) Add flour and cinnamon and mix.

3) Chop up or coarsely grate the apple.

4) Add apple to the batter.

5) Adjust the batter by adding flour and milk. The batter should be thick but pourable.

6) Add butter or margarine to your frying pan over medium heat. Ladle in batter to create a few pancakes at a time. Flip once after golden brown.

7) Serve with icing sugar, cinnamon sugar and/or maple syrup.
