Island Pork Tenderloin

Ingredients:

For Wet Spice Rub:

1 teaspoon salt

1/4 teaspoon fresh ground pepper

1/2 teaspoon ground coriander seeds

1/2 teaspoon sweet chili sauce

1/2 teaspoon ground cinnamon

2 pork tenderloins (approximately 1 1/2 pounds total) trimmed

1 tablespoon olive oil

For Glaze

1/2 cup brown sugar

1 tablespoon finely chopped garlic

1/2 tablespoon sweet chili sauce

Directions:

1) Wash the tenderloins and pat dry.

2) Mix together the wet spice rub ingredients in a small bowl and then coat pork tenderloins.

3) Heat one tablespoon oil over moderately high heat in a skillet or frying pan. Brown pork tenderloins for about 4 minutes. Be sure to turn to brown all sides. If skillet/frying pan is not oven-proof, transfer over to a baking pan.

4) Mix the Glaze ingredients together in a small bowl. Place over the top of the tenderloins.

5) Roast tenderloins in a 350 degrees oven and until it reaches 140 degrees. It will take 15 to 20 minutes. Loosely tent with foil for at 10 minutes before slicing.
