Apple Pannekoek / Pannenkoek
Apple Pannekoek / Pannenkoek (Dutch Apple Pancakes with Caramelised Sugar)
Serves 2 (Makes 2 large pancakes or 4 small pancakes)
Ingredients:
1 cup (200 g) flour
1/2 tsp baking powder
A pinch of salt
2 eggs
2 apples (I use Granny Smith)
Lemon juice
Caster sugar
Cinnamon sugar
Butter
Directions:
1) Peel and core the apples and slice them thinly. Turn them in lemon juice so they retain their color.
2) Combine the flour with the baking powder and salt, and add enough cold water to make a thick batter. Stir in the eggs.
3) Heat a little butter in a skillet and spoon in the batter. Immediately arrange the apple slices like tiles on top of the pancakes. Sprinkle with sugar and cook until the pancake is brown.
