Maple Mustard Pork Tenderloin

Ingredients:

2 pork tenderloins (approximately 1 1/2 pounds total) trimmed

salt and pepper

1 tablespoon olive oil

3 tablespoon Dijon mustard

1/2 cup maple syrup (honey can be substituted)

Directions:

1) Wash the tenderloins and pat dry.

2) Sprinkle salt and pepper on tenderloins

3) Heat one tablespoon oil over moderately high heat in a skillet or frying pan. Brown pork tenderloins for about 4 minutes. Be sure to turn to brown all sides.

4) If skillet/frying pan is not oven-proof, transfer to a baking dish.

5) Mix maple syrup and mustard in a small bowl until smooth.

6) Preheat oven to 350 degrees. Roast pork tenderloins for about 10 minutes.

7) Baste about half the sauce on the pork tenderloins. Return to oven and roast until it reaches 140 degrees. It will take another 5 to 10 minutes. Loosely tent with foil for at least 10 minutes.

8) Heat the remaining sauce in a pot. Drizzle over the rested pork tenderloins.
