Apple Crumb Muffins
Ingredients:
2 cups flour
1 1/2 cup whole wheat flour
2 large apples, peeled and chopped
1 cup white sugar
1 cup brown sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 1/2 cup walnuts, chopped
1 teaspoon vanilla
1/2 cup raisins
sifted confectioner's sugar
1/2 cup buttermilk
Directions:
1) Preheat oven to 300 degrees F.
2) Combine flour, apples, sugar, salt, soda and cinnamon in a large bowl. Stir in oil, milk, walnuts, raisins and vanilla. Mix well.
3) Place paper cups into muffin pan and fill with batter.
4) If desired lightly sprinkle tops of muffins with sugar and bake for 30 minutes.
5) When completely cooled dust with confectioners sugar.
