Hoisin Roast Chicken

Ingredients:

1 whole chicken (approximately 3 lbs)

3 tablespoon hoisin sauce

1 tablespoon soy sauce

1/2 tablespoon sesame oil

honey

Directions:

1) Preheat the over to 375F

2) Wash chicken and pat dry it dry with paper towels. Tie the legs together with string and tuck the wing tips under the body of the chicken.

3) In a small bowl, mix hoisin sauce, soy sauce and sesame oil together. Rub all over chicken.

4) Place chicken on a rack breast side up inside a roast pan.

5) Add some water to the unused remaining sauce and pour into pan.

6) Cook for 50 to 60 minutes or until the juices run clear between the leg and thigh. Do NOT baste with juices from pan. You can optionally turn the chicken over after about 30 minutes.

7) With about 5 minutes to go, liberally baste the chicken with honey. I often switch over to broil to get a more golden and crispy skin.

8) Be sure to let the roast chicken sit for at least 10 minutes before cutting up or carving the chicken.

9) Pour the liquid from the pan into a serving bowl. Skim off the fat. This juice can be poured over the chicken for additional flavor.
