Pork Tenderloin with Mushroom Sauce

Ingredients:

2 pork tenderloins, trimmed

1 teaspoon each salt and pepper

2 tablespoons oil

Sauce

1 tablespoon oil (or butter)

1/2 to 1 large onion, chopped

stems from 16 ounces of button mushrooms

salt and pepper to taste

1 head roasted garlic (optional)

2 tablespoons oil

2 tablespoons flour

2 cups chicken or beef broth

salt and pepper to taste

Directions:

1) Wash the tenderloins and pat dry.

2) Rub the salt and pepper mixture all over the pork tenderloins.

3) Preheat oven to 350F.

4) Heat two tablespoon oil over moderately high heat in a skillet or frying pan. Brown pork tenderloins for about 3 minutes.

5) If skillet/frying pan is not oven-proof, transfer to a baking dish along with the marinade.

6) Roast pork tenderloins until the thickest part of the tenderloin registers 135F.

7) Let the tenderloins rest for at least 10 minutes before carving.

Sauce

8) While the tenderloins are baking, add 1 tablespoon of oil to a skillet. Add in the onions and mushrooms. Add a generous pinch of salt and pepper. Saute until the onions are a nice golden brown.

9) In a pot over medium heat, add 2 tablespoons oil. Once heated, add 2 tablespoons flour. Keep stirring flour with the oil for about 1 to 2 minutes until the mixture reaches a golden brown colour.

10) Slowly add the broth whisking the mixture as you add it. Then add the onion/mushroom mixture. If you have roasted garlic, add now. Use a hand blender to chop up the onion and mushrooms.

11) Season with salt and pepper to taste.

12) Serve over slice of pork.
