Lemon Cake

Ingredients:

4 oz butter

1 cup sugar

Zest of 1 lemon

3 eggs

1 cup all-purpose flour

1 teaspoon baking powder

½ cup yogurt

Directions:

1) Preheat oven to 350 degrees F.

2) Grease and flour a 9-inch square or round cake pan.

3) Beat butter with mixer until creamy. Add sugar and lemon zest. Beat 3 minutes. Add eggs, one at a time, beating after each addition. Beat just until batter looks smooth.

4) Combine flour and baking powder. Fold flour mixture into batter. Add yogurt. Mix until just combined.

5) Pour into pan. Bake for 25 minutes, until toothpick comes out clean. Cool 10 minutes before removing.
