Lemon Blueberry Coffee Cake

Ingredients:

1 3/4 cups flour

1 cup of sugar

2 1/2 teaspoons baking powder

a pinch of salt

1 egg

2/3 cup milk

1/3 cup vegetable oil

1 package of blueberries (at least 1 cup)

zest of one large lemon

Streusel Topping

3 tablespoons flour

2 tablespoons sugar

1/4 teaspoon cinnamon

1 tablespoon melted butter

Directions:

1) Preheat the oven to 375F.

2) Beat egg, milk and oil.

3) Mix the dry ingredients together in a separate bowl. Then add the dry ingredients to the egg mixture and stir just enough to combine.

4) Zest the lemon over the batter and mix some more.

5) Fold in the blueberries gently.

6) Pour the batter into a greased 9 inch square pan. Mix together topping ingredients and sprinkle it evenly with the streusel topping.

7) Bake for about 30 minutes until a toothpick inserted in the center comes out clean.
