Crusts!  It's all about the crusts - flaky, of course, but then there is flavored crust.  Oh wait, butter, real butter.


But then, how about the fruit - sure there's apple, but we've got seasonal fruits here too like paw paws, gooseberries, even chokecherries and lingonberries. But enough of these healthy fillings, let's just head into the cream pies - 


Black forest pie with bittersweet chocolate, heavy cream, and unsweetened chocolate topped by pitted cherries and more whipped cream!

oh, how about Peanut Butter - Banana cream pie with heavy cream?

or orange-vanilla panna cotta pie - beautiful and exotic - has to be delicious because its Italian!

and here's the killer - Peaches-and cream pie...

or Creamy-Mango.

Oh, and by the way, Erin includes smart tips on how to work the dough, what to do if the filling doesn't set, how to substitute ingredients, innovative crusts like twisty layers intertwined across the top.  It's all too good and its the only book I've seen that has it all in one place - wonderful photos, complete recipes, process suggestions, and innovative flavors.  Done.  For Thanksgiving!
