for the salad:
3 cups spinach leaves
1/2 cup sliced onions
1/2 cup oranges, peeled & diced
1/2 cup POM pomegranate seeds
1/4 cup salted peanuts, coarsely chopped
Optional: 1/2 cup grilled chicken, diced
Toss all ingredients together in a salad bowl. Coat with POM Black Sesame Vinaigrette.
for the vinaigrette:
1/3 cup POM 100% Pomegranate Juice
1/2 clove fresh garlic, chopped
1 tablespoon soy sauce
1 tablespoon lime juice or cider vinegar
1 tablespoon brown sugar
1 tablespoon olive oil
1/2 teaspoon black sesame seeds
salt & pepper to taste.
Whisk all ingredients together in a small bowl. Pour over POM Chopstick Salad.
(I added shredded red cabbage and carrots. Add whatever you like)
