Garlicky Chicken Thighs with Lemon-Anchovy Sauce
Note on preparation of the pie: I made the pie 2-days in advance and they put it in the refrigerator along with a can of coconut cream. After the main course, I opened the coconut cream can. There was a solid chunk of coconut cream on the top, about 2 inches thick that I found it impossible to whip.* I ended up smearing the solid coconut cream around on the top of the pie. Didn't look too good.
*Was this just the result of an "old" can? I bought all the coconut ingredients at Draeger's. I don't know how long these items had been on the shelf.
Post-mortum on wine consumption: There were 4 of us at the dinner. We drank all of the D&L Carinalli Chardonnay, 2/3 of the Mary Edwards Pinot Noir, and 2/3 of the Bellini half-bottle dessert wine. The Cuvaison Chardonay and the Lynmar Pinot Noir, although presumably excellent wines, were unopened.
