CARBONNADE FLAMANDE
3.5-4 LB STEAK
3 tablespoons vegetable oil
2 lbs onions sliced thin
2 cloves garlic minced
3 tablespoons flour
1.5 cups chicken stock
1.5 cups dark beer ( Anchor Steam)
thyme ¾
1bay leaf
1 tablespoon dark brown sugar
1 tab cider vinegar
Brown meat in 1tablespoon oil- transfer meat
Add 1 tbl oil , then onions 12-14 min
Then add garlic – ½ min
Then flour- stir-
Add chicken stock- stir
Add beer slowly- stir
Add thyme, bay leaf,sugar, vinegar
Add beef-bring to simmer- place in 300 oven 1.5-2 hours- adjust salt/pepper
