Chicken

The starting base consists of slightly browned chopped onion, sage, rosemary and a few tender celery stalks along with finely chopped celery sprouts.

Add and brown chicken breasts, typically five minutes on each side, you just want to achieve a slight browning. Salt and pepper to taste.

Add the porcini mushrooms which have been blanched in water or chicken broth. Mix one small can of tomato paste with the broth from the porcini's,

you to achieve a fairly thick sauce. Add one can of diced tomatoes followed by the tomato paste sauce. You want to cover the chicken breasts with the

tomatoes. Add some Italian parsley.

Place covered pot in a oven at 350 for 30 - 45 minutes.

The porcini mushrooms could be left out and replaced with aleppo and other peppers. Another option is to brown stew meat and add Hungarian sweet

paprika along with carrots for a stew. I add the aleppo powder or the paprika to the tomato paste and mix thoroughly.
