Ingredients:
2 packages of Ramen
2 Eggs
2 Green Onion Stalks (sliced)
1/2 cup Mushrooms (sliced)
1/8 cup Soya Sauce
Siracha/ Hot Chili Sauce (to taste)
Instructions:
Cover eggs with water in a small pot. Bring to a boil and cook for 6 mins for a soft egg and 10-12 mins for a hard egg.
Meanwhile, cook the noodles according the the package instructions.
Once noodles are cooked, add the sliced mushrooms & soya sauce
Top with the eggs (peeled and sliced), Green onions stalks, & desired seasoning.
Notes:
You can opt for a low-sodium soya sauce to reduce the sodium content of this soup.
You can also poach or fry your eggs instead of boiling.
