Ingredients
2 medium Zucchinis (thinly sliced)
5 Plum Tomatoes (thinly sliced)
1.5 cup Cheddar Cheese (grated)
1/3 cup Parmesan Cheese (grated)
2 Garlic Cloves (minced)
1/2 tsp Dried Oregano
1/2 tsp Dried Basil
Salt & Pepper
Topping:
1/4 cup Butter
3/4 cup Bread Crumbs
2 tbsp Onion (minced)
Instructions
Preheat oven to 375 degrees F and lightly grease a 9x9 baking pan.
Thinly slice the zucchini and tomato into discs.
In a large bowl, combine the cheddar cheese, parmesan, garlic, oregano & basil. Season with salt & pepper.
Arrange 1/2 of the zucchini slices in the bottom of the greased pan. Sprinkle 1/4 of the cheese mixture on top of it.
Arrange 1/2 the tomatoes on top of the cheese layer, followed by another cheese layer on top of the tomatoes.
Repeat steps 4 & 5.
Melt the butter in a medium frying pan over medium heat, add the onions and cook until soft. Stir in the bread crumbs until they have absorbed the butter. Sprinkle the crumber over the top of the casserole.
Cover the pan loosley with foil and bake fior 25 mins. Remove foil and bake for an additional 15-20 mins.
Let sit for 10 mins outside of the oven & enjoy!
Notes
You can lay the zucchini and tomatoes on paper towels before layering them to absorb some of the moisture. This may help improve the consistency of the dish.
You can serve on top of a bed of rice.
