Ingredients:
3 lb Potatoes
1 small Red Onion
1.5 cups Mayonaise
1/4 cup Chopped Pickles
1 tbsp Mustard
1 tbsp lemon juice
4 Hard Boiled Eggs
1/2 tsp Paprika
salt and pepper
Optional: top with chopped chives
Instructions:
Peel potatoes and cube them into ~1/2 inch peices. Place them into a pot and cover them with water. Bring water to a boil and cook for ~15 minutes or until potatoes are fork tender. Drain potatoes and allow them to cool.
While potatoes are cooking, place eggs in a medium pot and cover with water. Bring water to a boil, once boiling remove from heat and cover for 15 minutes. Remove eggs from hot water and place into an ice bath for 10 mins.
Chop red onion into small pieces and add to a bowl with mayonaise, chopped pickles, mustard, lemon juice, paprika, salt and pepper.
Peel the boiled eggs and chop them into small bite-sized pieces. Toss the eggs and cooled potatoes in the dressing.
Place finsihed salad in the fridge for ~1hr to chill. Serve and enjoy!
Notes:
Peeling the potatoes is an optional step based on preference.
You could add in bacon, dill, diced red peppers, etc. to add more flavour!
