Ingredients
1 medium-large Zucchini
1 cup Chopped Onions
1 cup Chopped Tomatoes
1 Chopped Green Chilli Pepper
1 tsp chopped ginger
1 sprig curry leaves (optional)
1 + 1/2 Tbsp Oil
1 pinch Mustard Seeds (optional)
1/2 tsp Cumin seeds
3/4 tsp garam masala
3/4 tsp Red Chilli Powder
1/2 tsp Salt
1/4 tsp Turmeric
1/2 cup Frozen green peas
1 tsp Kasuri Methi (optional)
1/4 - 1/2 cup Coconut Milk (optional)
Instructions
Fine chop onions, tomatoes, chillies & ginger.
Rinse and chop zucchini into 3/4 inch pieces
Heat the oil in a pot and once heated, add in the mustard and cumin seeds. Add in curry leaves, ginger & green chillies. Sauté for 30 seconds.
Add in onions and fry for 3-4 mins.
Turn heat to medium and add in the red chilli powder, turmeric, salt & garam masala.
Add in tomatoes and zucchini, stir fry for 3 mins.
Cover and cook at the lowest heat until tomatoes break down and zucchini turns slightly tender.
When tender, add in grean peas and garam masala. Add in coconut milk if desired. Bring to a gentle boil and turn off the heat.
Serve with rice or roti.
Notes
You can use curry powder in place of garam masala.
If using fresh peas, add them in at the same time as the zucchini.
Adding in the coconut milk turns the dish into a saucy dish.
