Ingredients:
3 cups Rice (cooked)
1-2 Chicken Breasts (diced)
2 tbsp Oil
1 + 1/3 cup Frozen Veggies Blend
3 Green Onion Stalks (chopped)
2 Garlic Cloves (minced)
3 large Eggs
2 tbsp Soy Sauce
Salt and Pepper
Optional: Sriracha
Instructions:
Cook the rice as directed on the package & chop chicken into small bite-sized pieces.
In a large frying pan, heat half of the oil (1 tbsp) over medium-high heat. Once hot, add the chicken pieces, season with salt and pepper and sauté until cooked through. Remove chicken from pan and set aside.
To the same pan, add the rest of the oil. Add the frozen veggies and green onion and sauté for 1 minute, add garlic and sauté for an additional 1 minute.
Push the veggies to the edge of the pan, and crack the eggs into the empty side of the pan. Scramble the eggs until cooked.
Add the chicken and rice into the pan and add the soy sauce and salt & pepper as. desired.
Serve with sriracha
Notes:
This recipe is a great way to used leftover cooked rice.
Using sesame oil is a great way to add flavour to the recipe.
